Blend coconut flakes, dates, lime zest, and cashews. Roll into bite-sized balls. Chill. Enjoy these refreshing and nutritious coconut lime energy bites.


  • 1 cup unsweetened coconut flakes
  • 1/2 cup almond butter or any nut/seed butter
  • 1/4 cup honey or maple syrup
  • Zest of 1 lime
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Additional coconut flakes for rolling (optional)


1 In a mixing bowl, combine the almond butter, honey or maple syrup, lime zest, vanilla extract, and a pinch of salt.

Add the unsweetened coconut flakes to the bowl and mix until all the ingredients are well combined.

Refrigerate the mixture for about 15-30 minutes to firm up slightly.

Once chilled, scoop out spoonful of the mixture and roll into bite-sized balls.

If desired, roll the energy bites in additional coconut flakes to coat the exterior.

Place the energy bites on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.

Once set, transfer the energy bites to an airtight container and store in the refrigerator.
