Coconut-Crusted Chicken Tenders

Ingredients

• 1 lb chicken tenders or chicken breast strips
• 1 cup shredded coconut
• 1/2 cup breadcrumbs (panko or regular)
• 2 eggs, beaten
• Salt and pepper to taste
• Dipping sauce of your choice (sweet chili sauce, mango chutney, etc.)

Directions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, combine the shredded coconut and breadcrumbs.
3. Season the chicken tenders with salt and pepper.
4. Dip each chicken tender into the beaten eggs, then coat it with the coconut-breadcrumb mixture, pressing gently to help it stick.
5. Place the coated chicken tenders on the prepared baking sheet.
6. Bake in the preheated oven for about 15–20 minutes, or until the chicken is fully cooked and the coating is golden and crispy.

Serve the coconut-crusted chicken tenders with your favorite dipping sauce.
